Vegan Pancakes

Did you know that you can make pancakes without milk or eggs? You can make the same fluffy, sweet stack of pancakes you know and love by substituting them for vegan options such as applesauce, aquafaba (chickpea brine), silken tofu, mashed banana, and flax or chia seeds.

I absolutely love making vegan pancakes for friends and family whenever possible. They’re easy to make and can be customized with fruit toppings, syrups, powdered sugar, or even made with chocolate chips. These will be one of the best vegan pancakes you have ever had. Give it a try!

Ingredients

  • 1 cup all-purpose flour (spooned and leveled)

  • 2 tbsp sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup alternative milk (such as almond, oat, soy, rice, or pea protein)

  • 2 tbsp vegan butter, melted, or preferred plant-based oil

  • 1 tbsp vegetable or olive oil

  • 1 mashed banana 🍌

Directions

  1. Sift flour, baking powder, sugar, cinnamon, and salt together in a large bowl. Make a well in the center and add alternative milk, melted vegan butter or favorite oil, vanilla, and banana; mix until smooth.

  2. Heat a lightly oiled griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with the remaining batter.
