Vegan Burrito Bowl Recipe

In need of a quick and easy vegan meal that you can bring to the office or make to take on the go? Try this simple Chipotle burrito bowl dupe that will save you money while still giving you the fast casual take out flavor youโ€™re craving.

Bowl Ingredients

  • 1 16 oz can of black beans ๐Ÿซ˜

  • 2 cups rice, uncooked (4 cups cooked) ๐Ÿš

  • 1 teaspoon no-salt-added taco seasoning ๐ŸŒฎ

  • 1 cup of corn (cooked) ๐ŸŒฝ

  • 1 cup diced avocado

  • 2 medium tomatoes ๐Ÿ… diced

  • 1 small white onion ๐Ÿง… diced

  • 3 limes ๐Ÿ‹โ€๐ŸŸฉ

  • 1/2 cup chopped fresh cilantro

  • 1/2 teaspoon garlic powder ๐Ÿง„

  • 1/2 teaspoon chili powder ๐ŸŒถ๏ธ

  • Salt to taste ๐Ÿง‚

Bowl Directions

  1. Make the rice and add 2 limes worth of juice and 1/4 cup of chopped fresh cilantro.

  2. Heat and season the beans with taco seasoning.

  3. Heat the corn

  4. Make the pick pico de gallo by combining the tomatoes, onions, lime juice from 1 lime, 1/4 cup of chopped fresh cilantro, and salt to taste.

  5. Divide the rice into 4. Top each with 1/2 cup of beans, 1/4 cup each of corn and avocado, 2 tablespoons pico de gallo, and 1 tablespoon of cilantro. Seal in containers and refrigerate until ready to eat or serve and enjoy.
